What are the best breeds?
As said, there is no singular "best horse" in the game. Only strong breeds are as much better than the standard breeds you meet early in. Talking about the different types: Arabs, Turkoman and Missouri Fox Trotter races stand out as the most rounded and top level. Keep in mind that the statistics below reflect the horse when you find it and not on top.
Arabian breed horses have some of the best statistics overall. There are a total of three categories, each with its own unique statistics: White, Black and Rose Gray Bay.
White Man Arabian
The White-Maned Arabian can only be found in nature, which makes it possible to find relatively early. This snowy beauty wanders around the banks of the Isabella lake. It's pretty hard to tame, so you have to be persistent to follow it and calm it down enough before you can approach it.
Compared to other Arab horses, it has lowest base Health and Stamina Statistics – but it is still much higher than some of the more common horse breeds. A worthy compromise for a fantastic horse you can catch and tame so early in the game. Be sure to watch the wolves hanging out nearby.

Rose Gray Bay-Maned Arabian
The Rose Gray Bay-Maned Arabian can only be purchased at Blackwater Stable during the Epilog section of the game.
Turkoman racing horses represent their lack of acceleration with solid speed, average handling and a High Health Center . As a cross between War and Racing races, they are well worth owning to riders who want a faithful steed who can withstand injury without sacrificing speed. All three Turkoman breeds have the same exact statistics as reflected below, along with a brief overview of where to buy them and when.

Missouri Fox Trotter balances the best base speed of all horse breeds with Solid Health and High Stamina .
